tests: Use quasiquoted 'match' patterns for package sexps.
Turns out it's easier to read.

* tests/cpan.scm ("cpan->guix-package"): Use a quasiquoted pattern.
* tests/elpa.scm (eval-test-with-elpa): Likewise.
* tests/gem.scm ("gem->guix-package")
