gnu: gcc: Add unversioned 'gcc-toolchain' variable.

* gnu/packages/commencement.scm (gcc-toolchain): Rename to...
(make-gcc-toolchain): ... this.
(gcc-toolchain): New variable.
(gcc-toolchain-5): Turn into an alias for 'gcc-toolchain'.
