daemon: Always default to gzip for log compression.

* nix/libstore/globals.cc (Settings::Settings): Have 'logCompression'
default to COMPRESSION_GZIP unconditionally.
* gnu/services/base.scm (<guix-configuration>)[log-compression]: Default
to 'gzip.
* doc/guix.texi (Invoking guix-daemon, Base Services): Adjust accordingly.
