Add support for UTF-16BE and UTF-32BE

Add support for bigendian UTF-16 and UTF-32, and (for symmetry) add
explicitly littleendian operators.

...
Using hidden files are rather antisocial, and rather pointless in this
particular context. Change .stdout and .stderr to simply stdout and
stderr.
